Peach just sounds too cutesy to me....I preferred the weirdness of Princess Toadstool!
Did you like it better when Princess Peach's name was still Princess Toadstool?
They're two different characters, though they seem to be interchangable in the mario story line. Games like Mario Tennis for the N64 showed as two different characters.
